SOUTHWEST BLACK BEAN SALAD 1 – 15.5 oz can black beans, rinsed and drained 9 oz frozen corn 2 tomatoes, chopped (or salsa) 1 red bell pepper 1/4 cup nion, chopped 1 lime, juice of 3 Tbsp extra virgin olive oil Cilantro, chopped – use to your taste Sea salt and fresh pepper 1 small avocado, diced Directions: Combine beans, corn, tomato, onion, and cilantro. Mix lime juice, olive oil, salt & pepper & pour over salad. Marinate in the refrigerator. Add avocado before serving.
